I know I'm not the only one who has gotten into the kale craze, right?  It's hard not to when it's been labeled a superfood.  I won't get into the nitty gritty of what makes kale just so awesome, but head over here if you are interested in the break down of all the great nutrients found in kale.

The problem for most people is that kale isn't all that yummy on it's own.  It's pretty fibrous and is bland and earthy until it's spiced up.  And so with that, drum roll please, I bring you the Tuscan Kale Salad.  A surefire and simple way to get your whole family to eat kale.  (I promise, my kids really do eat this!)

Tuscan Kale Salad 5 pairing- A Mama Collective

We paired with another superfood, grilled salmon.  Seasoned with salt, pepper and some pre-made fish seasoning.  Along with an easy staple of mine, Lundberg Risotto.  I love making Risotto from scratch, but if you have ever made it, you know that it takes a good amount of time and commitment.  In my everyday mom life, this is a great alternative.

All in all, a great meal!
